You must remember that the sauerkraut remains vegetarian even with the shreds of bacon in it, because they are only there for flavouring #trufact

It may be an invasive plant species of some sort, an Asiatic water-hyacinth or similar. I trust it not.

I think the green thing is probably there to provide contrast, emphasizing the cooked meatiness of the sausage.
